Chocolate is often painted as the villain in the world of healthy eating. But let’s take a step back and look at where it begins - cocoa beans.

These are wholesome, plant-based foods rich in fiber and phytonutrients. The problem? It's what we do to them - adding cocoa butter, dairy, and refined sugar - that strips away their goodness.

Today, we’re flipping that script.

Let's use cocoa powder - pure cocoa beans with the fat squeezed out - giving us an even more concentrated source of nutrients and fiber.

And the base? Not flour, not oil - but sweet potato! Rich, hearty, naturally sweet, and oh-so-satisfying.

📝 Ingredients (Makes 8 Brownies)

  • 2 medium sweet potatoes, chopped and boiled

  • 1 tablespoon cocoa powder

  • 2 tablespoons oat flour (you can make this by grinding rolled oats at home)

  • 1/4 cup date paste (or 6 soaked seedless dates)

  • 2 tablespoons cashew butter (or a handful of cashews)

🥣 Method

  1. Cook the sweet potato
    Chop it into large pieces and boil until soft. This is the only cooking required!

  2. Mash or blend
    Add the boiled sweet potato, cocoa powder, oat flour, date paste (or soaked dates), and cashew butter (or cashews) into a bowl or food processor.

    • Using a food processor? Just blend everything together until smooth. If the mixture forms a big sticky ball, no problem! Just break it up and mash it a little more.

    • No food processor? No problem! Use a fork to mash and mix it all together. It’s fun and makes for a great activity with kids - they'll love the brownie even more if they’ve helped make it.

  3. Shape your brownies
    Flatten the mix on a plate and cut them into brownies with knife.

  4. Optional: Chill
    If you prefer firmer brownies, pop them in the fridge for 30 minutes or the freezer for 10 minutes. They’ll firm up beautifully.
